Recipes

I like to try out new recipes. I want to share a few of them that we've really enjoyed!

Spicy Sausage and Peppers with Penne
Taken from a Pampered Chef cookbook
8 oz uncooked penne pasta
1 lb hot Italian turkey sausage (about 4 links)
1 each: medium green, red and yellow bell pepper, cut into 1/4-inch strips
1/2 cup coarsely chopped onion
2 garlic cloves, pressed
1 can (14 1/2 oz) diced tomatoes in sauce, undrained
1 can (8 oz) tomato sauce
2 tsp Italian Seasoning Mix
1/4 cup (1 oz) grated fresh Parmesan cheese
Cook Pasta according to package directions. Drain and keep warm. Meanwhile, cook sausage in skillet over medium-high heat 14-16 minutes or until sausage is lightly browned and no longer pink, turning occasionally Remove sausages from skillet; cut diagonally into 1-inch pieces and set aside. Cut bell peppers into 1/4 inch strips. Coursely chop onion. In same skillet, cook bell peppers, onion and garlic over medium heat 6-8 minutes or until peppers are crips-tender, stirring occasionally. Add sausage, tomatoes, tomato sauce and seasoning mix. Cook and stir 1-2 minutes or until heated through. Place pasta in large bowl; pour suace mixture over pasta, tossing to coat. Sprinkle with parmesan cheese. Serve immediately.
Bruschetta Chicken Bake
Taken from Kraftfoods.com recipe
1 can (14 1/2 oz) diced tomatoes, undrained
1 pkg (6 oz) STOVE TOP stuffing mix for chicken
1/2 cup water
2 cloves garlic, minced
1 1/2 lb. boneless skinless chicken breasts, cut into bite-size pieces
1 tsp dried basil leaves
1 cup shredded mozzarella cheese
Preheat oven to 400 degrees. Place tomatoes in medium bowl. Add stuffing mex, water and garlic; stir just until stuffing mix is moistened. Set aside. Place chicken in 13X9-inch baking dish; sprinkle with the basil and cheese. Top with stuffing mixture. Bake 30 min. or until chicken is cooked through.
